Here's the whole policy, short enough to actually be a promise: if there's an unexpected allergen in a sauce, it's on the label, by its full name. Not hidden inside “natural flavors.” Not tucked under “spices.” Named.
Some allergens you will never meet in anything I make: no dairy, no eggs, no fish, no shellfish — not in any sauce, ever. That's not a diet pitch; it's just what's true about the bottle, and if you're reading this page, true is what you came for.
The example she carries
Look at La Segua.
I have a customer who's allergic to mango. If my labels followed industry standard, that fact could legally hide inside a “natural flavors” loophole — and he and his wife would be betrayed by the very thing that's supposed to keep us safe: labels with all the ingredients.
So look at La Segua. She carries amchur — mango powder — an ingredient most people would never expect inside a hot sauce, which is exactly why her label says amchur (mango powder), in full, where you can't miss it.
Why the loopholes exist in the first place
Their label is engineered to be incomplete. Ours is engineered to have nothing to hide.
The industry didn't just fail to disclose these ingredients — a whole class of them is legally exempt from labels. Processing aids. Incidental additives. Umbrella terms like “natural flavors” and “spices.” The label was never required to tell you everything.
